Kitchen Cutlery

This design is my take on the classic and popular German pattern chef knife, with its characteristic wide blade and prominent belly, ideal for rocking cuts. The handle scales are secured to the full tang by dovetailed bolsters on both ends.

My take on a French pattern chef's knife. Simplified handle, with only a frontal dovetailed bolster, grip scales secured by three pins, and a lighter blade than the Type 1, with a tip closer to the centerline of the knife.

A western version of a gyuto, with a full tang and a similar handle to my Type 2 Chef.

By popular demand, this is a smaller version of the Type 1 Chef Knife, more manageable for home cooks with less space. The blade is slightly shorter and narrower, with the same high tip and curved edge as the Type 1.

My take on a bunka, which is a smaller type of Japanese chef's knife. this design has an angular profile, with dovetailed bolsters on both ends of the handle.
